THE DOUGH- We craft our dough daily with simple ingredients: flour, water yeast and salt. There are no preservatives or conditioners. Our slow fermentation time with the simplicity of our ingredients creates a superior crust that is light and crisp on the outside and with a tender “melt in your mouth” crumb on the inside. THE SAUCE- We have spent hundreds of hours searching for the perfect tomatoes for our red sauces. We took this time because tomatoes are the only ingredient. We want our sauce to taste like fresh tomatoes and nothing else. We chose our tomatoes for their vibrant red color and natural sweetness. THE TOPPPINGS- Our chesses consist of the highest quality fior di late mozzarella, aged whole milk mozzarella, imported ricotta and fontina cheese, smoke mozzarella and smooth creamy goat cheese. Our fennel sausage is made in house daily using only the finest ingredients. All of our veggies are prepped daily and roasted in our wood fired oven with top quality olive oil, sea salt and fresh cracked pepper. THE COOKING- Each pizza is cooked in our wood fired oven imported from Naples, Italy at around 800 degrees Fahrenheit. You’ll know your pizza is cooked the traditional style of Naples by the tell-tale blackened char or “leopard spots” indicative of pizzas cooked in blistering hot, wood burning oven. This is NOIT a burned pizza, and in fact, the slight charring adds a much sought after depth of flavor only achieved by these special ovens. THE EXPERIENCE- Because of the lightness of our dough and the “less is more” approach to our ingredients, our pizzas are easily digestible and will not make you feel “stuffed”. Each 12 inch pizza can easily be enjoyed by one, or shared by two for a lighter meal. Our Pizzaiolo (pizza makers) take their time to hand stretch each pizza. Because of this hands on approach, and cooking with a “live flame”, every pizza is an individual work of art. Due to the unique characteristics of our product we highly recommend you sit and enjoy our pizza straight from the oven vs. taking it to go.

In honor of the first annual Utah Culinary Festival we are proud to introduce this chef inspired creation! Introducing the Pizza Nduja! (that’s en-DOO-yah) Featuring Spicy Nduja, balsamic reduction, fresh grated parmesan cheese, wood roasted mushrooms and fresh basil. This spicy & smoky work of art will only be available during the festival Oct 7-13th. All proceeds from this delicious masterpiece will go directly to support the culinary program at Southwest Tech.
